2 c. oats
1 ¾ c. firmly packed brown sugar
1 ½ c. flour
1 tsp. baking powder
½ tsp. baking soda
1 c. butter, softened
½ c. chopped almonds
1 c. mini semi-sweet chocolate chips
1 large egg, beaten
1 (14 oz.) can Sweetened Condensed Milk
½ c. creamy peanut butter

Heat oven to 350F. Combine butter and brown sugar in a large bowl.  Slowly add oats, baking soda, baking powder and flour until mixture resembles fine crumbs.  Stir in chopped almonds.

Reserve 1 ½ cups crumb mixture.  Stir egg into remaining crumb mixture.  Press crumb mixture into bottom of 9 x 13-inch baking pan.  Bake for 15 minutes.

In a small bowl, stir together sweetened condensed milk and peanut butter until well combined. Pour evenly over partially baked crust.

Stir together reserved crumb mixture and chocolate chips. Sprinkle evenly over peanut butter layer.

Bake an additional 15 - 20 minutes.  Cool then cut into bars.

Janet Wilwerding is the communications manager for Iowa Corn. I grew up helping raise cattle and hogs and assisted in producing corn and soybeans.  Being the second oldest of six children allowed me to gain an appreciation for agriculture as I was often the one helping plant and harvest.  I received a bachelor of science degree in marketing from Iowa State University and an MBA from Drake University.  I am lucky I to live close to my families' farm so my husband, kids and I can help out whenever possible. I have a passion for baking and enjoy de-stressing in the kitchen!
