Our recipe this week is from Kevin and Terri Rempp. Kevin is in a family farm operation raising corn and soybeans near Montezuma in Poweshiek County. Three generations of Rempps farm together. Kevin is chairman-elect to the Iowa Corn Promotion Board for 2012-2013.
Terri grew up on a farm on the west side of Montezuma. When she married Kevin she moved to the east side of Montezuma. She kept the same mailman and the same address of Rural Route 1. Terri enjoyed being a stay-at-home mom while their kids were growing up but when their daughter left for college Terri began working full time as a para educator at Montezuma Community School.


Kevin and Terri are parents to two grown children. Their daughter, Heather, is a key accounts manager for Commerce Bank in Kansas City. She and her husband, Ryan, are parents to an 18-month old daughter, Lana. Kevin and Terri’s son, Drew, works part-time for Monsanto, is a substitute teacher and is also involved in the family farming operation. He and his wife, Brittany, live near Montezuma.
When the kids left home Kevin and Terri started taking road trips on their motorcycle. They enjoy traveling, reading, cooking and eating. A requested family favorite is Ice Cream Dessert.
Ice Cream DessertCrust:
1 package crushed graham crackers
1/ 4 C. sugar
1/ 4 C. melted margarine
Filling:
1 C. milk chocolate chips
3 beaten eggs
3/ 4 gallon ice cream
1 C. margarine
2 C. powdered sugar
Cover bottom of 9x13 pan with crust, reserving a small amount of crumbs to garnish top. Bake at 325 degrees for 8 minutes. Melt the chips and margarine. Cool. Add the eggs and powdered sugar. Alternate layers of chocolate mixture with ice cream. Top with reserved graham cracker crumbs. Store in freezer until ready to serve.
